Protein MAGIC!

Should you be whining about  protein sources ….

Here is a recipe that has it all – shared with us by Barbara King-Hall!  This dish is highly nutritious.  It is beautiful.  It is delicious.  It stores easily.  It is easy to create.  It is inexpensive.  And, it morphs easily into another possibility.  Satisfy your protein needs with this tasty dish – suitable for any of your protein meals!

Spicy Black Beans with Lime  (serves 4)

2 small cans (15.5oz) Black Beans, drained and rinsed.

½ Cup Carrot, diced

½ Cup Celery, Diced

1 Tbs Cilantro, chopped

1 Clove Garlic, finely chopped


2 Limes, zest and juice

1/8 Cup White Wine Vinegar

¼ tsp Cayenne Pepper

½ tsp Salt

¼ tsp Black Pepper

¼ Cup Olive Oil

  1. Make the dressing by combining the lime zest and juice, vinegar, cayenne, salt and black pepper, gradually whisking in the oil.
  2. Toss the beans and the carrots, celery, and cilantro with the dressing.

‘Can be a favorite side dish or main dish, storing easily in refrigerator.  ‘Can be a wrap filling.  ‘Can morph into a fantastic dip by using a food processor and adding a drizzle of Olive Oil.  (Eat with artichokes, zucchini, celery, etc.)

    Woody – great tip! And I just happened to buy some black beans yesterday upon return from my ‘eat-a-thon’ vacation in Utah! (Okay, I turned 50 on the day of this post – had to have an extra slice or three of that coconut cake any French pastry chef would give a nod to that my friends had made for me so am looking forward to resuming my ‘clean’ eating – have been on a sugar rush for 3 days!)

    I want a hula hoop! Where’s a good place to pick one up? The jump rope idea sounds great, too.

    Can’t wait for boxing day. And looking forward to being back into my workout routine with you, Sarah. A demain!
